Watermelon with Feta and Balsamic Vinegar This is one of the easiest dishes to assemble. It takes about 10 minutes and is so refreshing on a hot August day. Use it as an appetizer or desert…either way, you’ll love the taste and texture of this seasonal delight.
Ingredients: 10, 4 x 2 pieces of seedless watermelon ¼ cup of Strippaggio 18 year or coconut balsamic vinegar, (either are perfectly suited to this dish) 5 ounces of crumbled feta cheese 3 tablespoons of fresh mint cut chiffonade
Assembly: Place the watermelon in a bowl and drizzle with balsamic vinegar. Add crumbled feta cheese and mint. Let sit for 10 minutes then gently toss.
